Bilton Lodge Hash Brown Egg Cups

Breakfast is the most important meal of the day, so why not combine nutrition with comfort?

At Anglicare, we are continuing to support people struggling with financial difficulties, unemployment and mental health challenges.

Gifts to our 2021 Winter Appeal will be used to assist with emergency accommodation, provide nutritious food for families, and keep people warm during the colder months.

Food for thought

For a high protein fix and some good old-fashioned comfort, residents at Anglicare’s Bilton Lodge love a meal that includes Hash Brown Egg Cups.  It’s one of the most popular winter recipes put together by our kitchen staff and we’re pleased to share it with you below.

Ingredients
6 medium potatoes, peeled and coarsely grated (this recipe calls for Red Royales, but any Tassie-grown spuds will work)
1 brown onion, coarsely grated
40g butter, melted
2 bacon rashers, finely chopped
2 tbsp finely chopped chives
6 free range eggs
1 rye sourdough vienna
Baby rocket leaves, to serve

Instructions

  1. Preheat oven to 200°C.
  2. Grease 6 holes of a 2/3-cup (160ml) muffin pan. Line each base with baking paper.
  3. Combine the potato and onion in a colander. Use your hands to squeeze out as much liquid as possible. Place in a bowl. Add the butter. Season well.
  4. Divide the potato mixture evenly among prepared pans and press firmly against the side and base of the pans to create a 1cm-thick shell. Bake for 20-25 mins or until golden brown.
  5. Cook the bacon in a small frying pan over medium heat for 5 mins or until crisp. Transfer to a plate lined with paper towel.
  6. Sprinkle the hash brown shells with half the bacon and half the chives.
  7. Carefully crack an egg into each hash brown shell. Sprinkle with the remaining bacon and season.
  8. Bake for 10-12 mins or until eggs are cooked to your liking.
  9. Use a small knife to run around the side of each muffin pan hole to release the hash brown egg cups. Divide among serving plates. Sprinkle with remaining chives.
  10. Serve with toast and rocket.
